Ingredients
  

  • 12 large eggs
  • Salt and black pepper to taste
  • 1/2 teaspoon Italian seasoning
  • 1 –2 cups fresh baby spinach chopped
  • 3 green onions chopped
  • 24 grape or cherry tomatoes halved
  • 3 –6 ounces feta cheese or goat cheese, cheddar, or Parmesan

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with nonstick spray.
  • Whisk the eggs in a large bowl or measuring jug with salt, pepper, and Italian seasoning until frothy.
  • Fill each muffin cup with spinach, tomato halves, green onions, and a sprinkle of cheese.
  • Pour the egg mixture over the vegetables until each cup is about 90% full.
  • Bake for 20–25 minutes until the muffins are set and slightly golden on top.
  • Cool for a few minutes, then run a knife around the edges to release the muffins.
