Ingredients
  

For the Marinade

  • 3 tablespoons Extra Virgin Olive Oil Can substitute with avocado oil.
  • 2 tablespoons Lemon Juice Fresh lemon is preferred.
  • 1 teaspoon Dried Oregano Double the amount if using fresh.
  • 1 tablespoon Dijon Mustard Any mustard can substitute.
  • 1 teaspoon Kosher Salt Feel free to use sea salt.

For the Chicken and Vegetables

  • 1 pound Boneless Skinless Chicken Breasts Cut into 1-inch cubes.
  • 1 medium Zucchini Yellow squash can work as a substitute.
  • 1 cup Cherry Tomatoes Any small tomatoes can be used.
  • 1 small Red Onion Yellow or white onions can be used.
  • 1 can Canned Chickpeas Any canned beans can work.
  • 1/2 cup Kalamata Olives Green olives can be used.
  • 1/2 cup Feta Cheese Goat cheese is a great alternative.
  • 2 tablespoons Fresh Dill Fresh parsley can be used instead.

Steps

  • In a mixing bowl, combine the extra virgin olive oil, lemon juice, dried oregano, Dijon mustard, and kosher salt. Whisk until well blended.
  • Add the cubed chicken, zucchini, cherry tomatoes, red onion, chickpeas, and Kalamata olives to the marinade. Toss together until each piece is coated.
  • Transfer the marinated mixture into the air fryer basket and cook at 400°F for about 10 minutes, shaking the basket 2-3 times.
  • Top with crumbled feta cheese and freshly chopped dill, then serve immediately.

Notes

For an extra refreshing finish, squeeze an extra lemon wedge over the top before serving.
