For the Salmon and Marinade

  • 4 fillets Salmon skinless preferred, frozen works too
  • 1 medium Lemon zested and juiced
  • 2 cloves Garlic minced, fresh preferred
  • 1/2 teaspoon Black Pepper freshly ground
  • 3 tablespoons Olive Oil extra virgin recommended
  • 1 teaspoon Salt adjust to taste
  • 1 tablespoon Dried Parsley substitute with dill or tarragon if desired
  • 1 teaspoon Dried Thyme or use double fresh

For the Asparagus

  • 1 bunch Asparagus substitutable with green beans

Optional Additions

  • 1 cup Cherry Tomatoes adds sweetness
  • 1 medium Bell Peppers adds sweet crunch

Preparation

  • Preheat the oven to 400°F. Prepare your ingredients by zesting the lemon and juicing it, then mincing the garlic.
  • Whisk together the lemon juice, zest, minced garlic, dried herbs, olive oil, salt, and black pepper in a small bowl.
  • Trim the tough ends off the asparagus and dry them with paper towels.
  • Line a baking sheet with parchment paper and arrange the salmon fillets and asparagus.
  • Pour two-thirds of the marinade over the salmon and the remaining over the asparagus.
  • Bake for 12-13 minutes, or until the salmon is opaque and flaking easily.
  • Let the dish rest for 2 minutes before serving.
  • Optional: Squeeze fresh lemon juice over the dish before serving.
