Ingredients
  

For the Salmon

  • 3 lb Salmon filet skin-on preferred
  • 1 fruit Lemon zested, approx. 1-2 tsp zest

For the Crust

  • 0.5 cup Parmesan cheese freshly grated
  • 1.5 cups Panko breadcrumbs
  • 2 cloves Garlic minced
  • 3 tbsp Chives minced
  • 1 tbsp Thyme fresh leaves only
  • 1/3 cup Parsley finely chopped

For the Butter Mixture

  • 6 tbsp Salted butter softened
  • 1.5 tbsp Lemon juice freshly squeezed

For Garnish

  • Fresh parsley for garnish optional

Directions

  • In a medium bowl, combine panko, freshly grated parmesan, minced garlic, chives, thyme, parsley, and lemon zest. Mix well to ensure all the flavors blend beautifully.
  • In another bowl, whisk together the softened salted butter and freshly squeezed lemon juice until smooth and creamy.
  • Set your oven to 425°F (220°C) to prepare for baking.
  • Gently pat the skin-on salmon dry with paper towels and place it skin-side down on a parchment-lined baking sheet.
  • Brush half of the lemon butter mixture evenly over the top of the salmon.
  • Mix the remaining butter into your breadcrumb mixture and press it firmly onto the salmon to create a generous crust.
  • Roast the salmon in the preheated oven for 20-25 minutes, or until the crust is beautifully browned.
  • Allow the salmon to rest for 3-5 minutes outside the oven before serving. Garnish with fresh parsley.

Notes

Serve with a squeeze of fresh lemon juice for an extra pop of flavor.
