Ingredients
  

  • - 1 lb small shrimp peeled & deveined
  • - ½ cup mayonnaise
  • - ¼ cup Thai sweet chili sauce
  • - 3–5 drops hot chili sauce Sriracha
  • - ½–¾ cup cornstarch
  • - Neutral oil for frying
  • - Scallions for garnish
  • - Lettuce or rice for serving

Instructions
 

  • In a bowl, whisk together mayo, sweet chili sauce, and Sriracha. Set aside.
  • Pat shrimp dry and toss in cornstarch to coat.
  • Heat oil to 350°F. Fry shrimp in batches for 2–3 minutes until golden.
  • Drain on paper towels.
  • Toss hot shrimp in sauce and serve over lettuce or rice. Garnish with scallions.

Notes

- Adjust hot sauce for your spice preference
- Use chicken or tofu for a variation
- Can be baked or air fried for a lighter version
