Equipment

  • Mixing bowls
  • - Frying pan or deep pot
  • - Slotted spoon or strainer
  • - Paper towels or wire rack

Ingredients
  

  • - 1 lb small shrimp shelled & deveined
  • - ½ cup mayonnaise
  • - ¼ cup Thai sweet chili sauce
  • - 3–5 drops hot chili sauce like Sriracha
  • - ½ to ¾ cup cornstarch
  • - Neutral oil for frying
  • - Chopped scallions for garnish
  • - Lettuce leaves for serving

Instructions
 

  • In a bowl, mix mayo, chili sauce, and Sriracha. Set aside.
  • Pat shrimp dry. Toss in cornstarch until well-coated.
  • Heat oil to 350°F. Fry shrimp in batches for 2–3 mins.
  • Drain on paper towels.
  • While still hot, toss shrimp in sauce.
  • Serve over lettuce and top with scallions.

Notes

- Pat shrimp very dry for extra crispiness
- Bake instead of fry for a lighter version
- Sauce can be made in advance
