Ingredients
  

  • - 1 32 oz bag frozen tater tots
  • - 8 large eggs
  • - 1 cup whole milk
  • - 2 cups shredded cheese cheddar + mozzarella
  • - 1 cup cooked sausage or bacon
  • - 4 green onions chopped
  • - Salt and pepper to taste
  • - Optional: diced peppers hot sauce, breadcrumbs

Instructions
 

  • Preheat oven to 375°F. Grease a 9x13-inch baking dish.
  • Whisk together eggs and milk. Season with salt and pepper.
  • Stir in sausage, cheese, and green onions.
  • Layer frozen tater tots on the bottom of the dish.
  • Pour egg mixture evenly over the tots.
  • Bake for 35–40 minutes until golden and set.
  • Cool slightly, slice, and serve warm.

Notes

To prep ahead, assemble and refrigerate overnight. Add 5–10 extra minutes to bake time if chilled. Freezes well in individual slices.
