Ingredients
  

  • Filling:
  • 1 cup grated paneer
  • 1 medium boiled potato mashed
  • 1 cup grated mozzarella
  • 10 –12 mozzarella cubes
  • 2 tbsp chopped coriander
  • ¼ tsp salt
  • 1 tsp chaat masala
  • 2 tsp achaar masala
  • tsp roasted kasuri methi
  • Dough:
  • cups all-purpose flour
  • ½ cup whole wheat flour
  • 1 tbsp semolina
  • 1 tsp salt
  • 2 tsp sugar
  • tsp baking soda
  • tsp baking powder
  • cup curd
  • ¼ cup milk
  • 2 tbsp oil
  • 1 tbsp kalonji seeds
  • Milk for brushing
  • Garlic Butter Topping:
  • 3 tbsp butter melted
  • 1 –2 green chilies minced
  • 1 tbsp chopped coriander
  • 1 tsp grated garlic

Instructions
 

  • Make the filling with paneer, mashed potato, spices, and grated cheese.
  • Mix and knead dough with flours, curd, milk, and oil. Let rest 30 mins.
  • Divide into 15 balls, roll each into 3½-inch discs.
  • Fill each with mixture and a mozzarella cube. Seal well.
  • Brush tops with milk, sprinkle kalonji. Rest 10 mins.
  • Bake or air fry until golden brown.
  • Brush hot bombs with garlic butter and serve warm.

Notes

Can be prepped a day ahead
Store in fridge up to 2 days
Reheat in oven or air fryer for best texture
