Ingredients
  

  • - 2 tbsp olive oil
  • - 1 onion diced
  • - 2 carrots chopped
  • - 2 celery stalks chopped
  • - 4 garlic cloves minced
  • - ¼ cup all-purpose flour
  • - 6 cups chicken broth
  • - 1½ lbs chicken thighs cubed
  • - 1 tsp thyme
  • - ½ tsp salt
  • - ½ tsp pepper
  • - 1 lb gnocchi
  • - 1 cup half-and-half
  • - 5 oz spinach chopped

Instructions
 

  • Sauté onion, carrot, and celery in olive oil for 10 minutes. Add garlic and cook 1 more minute.
  • Stir in flour and cook 1 minute. Slowly add broth, stirring to prevent lumps.
  • Add chicken, thyme, salt, and pepper. Simmer 5–7 minutes until chicken is cooked.
  • Add gnocchi and simmer 5 minutes until tender.
  • Stir in half-and-half and spinach. Cook until spinach wilts. Serve hot.

Notes

- Substitute half-and-half with milk for a lighter version
- Use rotisserie chicken to save time
- Add mushrooms or zucchini for more veggies
