Ingredients
  

  • **Chicken & Vegetables**
  • - 1½ lbs chicken breast cubed
  • - 2 tbsp olive oil
  • - 1 onion diced
  • - 3 garlic cloves minced
  • - 2 carrots sliced
  • - 1 red bell pepper chopped
  • **Broth**
  • - 6 cups chicken broth
  • - 1 cup heavy cream
  • - ½ cup sun-dried tomatoes
  • - 1 tsp oregano
  • - 1 tsp basil
  • - ½ tsp thyme
  • - ¼ tsp red pepper flakes
  • - Salt and pepper
  • **To Finish**
  • - 8 oz egg noodles
  • - ½ cup grated Parmesan
  • - 2 tbsp parsley
  • - 1 tbsp lemon juice

Instructions
 

  • Sear chicken in oil until cooked. Remove.
  • Sauté onion, garlic, carrots, and pepper.
  • Add broth, tomatoes, and herbs. Simmer 10 minutes.
  • Stir in cream, chicken, and noodles. Cook 6–8 minutes.
  • Stir in cheese, lemon juice, and parsley. Serve hot.

Notes

- Don’t overcook noodles if storing
- Use rotisserie chicken to save time
- Store for 3–4 days or freeze without noodles
