  • 1 Red Bell Pepper Diced to match onion size.

  • 4 cloves Minced Garlic Fresh garlic is recommended.
  • 28 oz Canned Diced Tomatoes Do not drain.
  • 2 tbsp Tomato Paste

For the Beans

  • 1 can Black Beans Drain and rinse.
  • 1 can Great Northern White Beans Drain and rinse.
  • 1 can Kidney Beans Drain and rinse.

For the Seasoning

  • 1 tbsp Cumin Use freshly ground for better aroma.
  • 2 tbsp Chili Powder Adjust to taste.
  • 1 tsp Salt Adjust during cooking.

Others

  • 4 oz Green Chilies Ortega roasted green chilies are recommended.
  • 1 cup Water

How to Make Chunky Crockpot Zucchini Chili

  • Prep Vegetables: Start by dicing the onion, red and green bell peppers, and zucchini into ½-inch pieces. Mince the garlic, ensuring each ingredient is ready to enhance your chili's flavor.
  • Mix Spices: In a small bowl, combine cumin, chili powder, and salt for a consistent flavor.
  • Prepare Beans: Rinse and drain the black beans, Great Northern white beans, and kidney beans thoroughly.
  • Assemble Chili: In your crockpot, add the diced onion, bell peppers, tomato paste, diced tomatoes with their liquid, green chilies, water, and minced garlic. Mix until well combined.
  • Incorporate Beans: Gently stir in the drained beans, combining them evenly.
  • Cook: Cover your crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
  • Finish: After cooking, taste and adjust the seasoning with more salt, cumin, or chili powder as needed. Serve warm!
