Ingredients
  

  • **Dry Ingredients**
  • - 1¼ cups all-purpose flour
  • - 1¼ cups old-fashioned rolled oats
  • - 1 teaspoon ground cinnamon
  • - ½ teaspoon baking soda
  • - ¼ teaspoon salt
  • **Wet Ingredients**
  • - ½ cup unsalted butter softened
  • - ¾ cup packed light brown sugar
  • - 1 large egg
  • - 1 teaspoon vanilla extract
  • **Apple Mixture**
  • - 1 cup peeled and finely diced Granny Smith apple
  • - 2 teaspoons lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  • In a bowl, mix flour, oats, cinnamon, baking soda, and salt.
  • In another bowl, cream butter and brown sugar. Add egg and vanilla.
  • Toss diced apples with lemon juice.
  • Mix dry into wet ingredients. Fold in apple mixture.
  • Scoop 2 tbsp of dough per cookie. Flatten slightly.
  • Bake 14–15 minutes. Cool on sheet for 5 minutes, then on wire rack.

Notes

- Swap in gluten-free flour and oats if needed
- Use Honeycrisp or Braeburn apples if preferred
- Freeze dough balls for fresh cookies anytime
