Preparation Steps

  • Wash the potatoes under cold water, scrubbing gently.
  • Cut the potatoes into uniform, bite-sized pieces.
  • Place the cut potatoes in a large pot and cover with cold water. Season with salt.
  • Bring to a boil, then reduce heat and simmer until tender (10-15 minutes).
  • Drain the potatoes and let them steam dry for a few minutes.
  • Finely mince the shallots and soak in cold water if desired.
  • Wash and chop the fresh herbs just before adding.
  • Whisk together vinegar, mustard, salt, and pepper in a small bowl.
  • Gradually drizzle in the oil while whisking until emulsified.
  • Pour two-thirds of the vinaigrette over the warm potatoes and toss gently.
  • Add shallots and herbs, tossing again to combine.
  • Marinate for at least 30 minutes or refrigerate for 1-2 hours before serving.
  • Taste the salad and add remaining vinaigrette if needed.
