For the Bacon

  • 8 slices Bacon Feel free to substitute with turkey bacon for a lighter option.

For the Black-Eyed Peas

  • 1 cup Dried Black-Eyed Peas Canned black-eyed peas can be used for quicker prep (just drain and rinse).
  • 1 teaspoon Smoked Paprika If unavailable, you can swap it for regular paprika.
  • 4 cups Chicken Broth Vegetable broth can be used for a vegetarian version.

For the Vegetables

  • 2 tablespoons Olive Oil Any neutral oil can work as a substitute.
  • 1 medium Onion Shallots may substitute for a milder flavor.
  • 2 stalks Celery You may omit this if not on hand.
  • 3 cloves Garlic Fresh garlic is preferred.

For Seasoning

  • 1 leaf Bay Leaf Feel free to omit if not available.
  • 1 teaspoon Fresh Thyme Use dried thyme sparingly if that's all you have.
  • 1/2 teaspoon Cayenne Pepper Adjust to taste or omit for a milder dish.
  • to taste Salt Aim for fresh ground to elevate the flavor.
  • to taste Freshly Ground Black Pepper

For the Greens

  • 1 bunch Collard Greens You can substitute with kale or mustard greens.

Directions

  • Dice the bacon and place it in a large pot over medium heat. Cook until crispy, which usually takes about 5-7 minutes. Once done, set the bacon aside, leaving the drippings in the pot.
  • In the same pot, add the diced onion, chopped celery, and minced garlic. Sauté for 3-5 minutes until they are softened and fragrant.
  • Stir in the smoked paprika and cayenne pepper to the sautéed vegetables. Allow them to toast for about 30 seconds.
  • Add the rinsed black-eyed peas, crispy bacon, chicken broth, bay leaf, and fresh thyme to the pot. Bring the mixture to a boil over high heat.
  • Reduce the heat and let it simmer gently for 60-80 minutes, stirring occasionally, until the peas are tender.
  • Once the peas are tender, season your dish with salt and freshly ground black pepper to taste.
  • Incorporate the chopped collard greens into the pot and continue to simmer for an additional 15-30 minutes, or until they are tender.

Notes

Serve with a sprinkle of fresh thyme on top for added flavor and a touch of elegance.
