Cooking Steps

  • In a large pot, brown the crumbled chicken sausage and ground beef over medium-high heat for 8-10 minutes. Drain any excess fat to keep the soup from becoming oily.
  • Add olive oil to the pot and sauté the finely diced onion for about 3 minutes until softened and fragrant.
  • Incorporate the diced tomatoes into the mix; cook for 2-3 minutes until they release their juices.
  • Add the browned meat back to the pot. Pour in the marinara sauce, chicken broth, water, oregano, garlic salt, and black pepper; bring to a boil.
  • Stir in the radiatore pasta and cook for 8-10 minutes until al dente. Check at 8 minutes to avoid overcooking.
  • Remove the pot from heat and gently stir in the cottage cheese until incorporated.
  • Preheat the oven to broil. Mix the butter and garlic salt together, then brush the inside of each bread bowl with this mixture. Broil for 2-3 minutes until golden brown.
  • Ladle the hot lasagna soup into each toasted bread bowl. Top with mozzarella and fresh parsley.
