  • Increase the heat to medium-high and add the ground beef. Cook for 5-7 minutes, breaking it apart with a spoon, until it’s beautifully browned.
  • Stir in minced garlic, Italian herbs, tomato paste, salt, pepper, and a pinch of red pepper flakes. Cook this mixture for 1 minute until fragrant and flavorful.
  • Pour in the marinara sauce and beef broth. Bring the mixture to a vigorous boil, then lower it to a gentle simmer.
  • Add the broken lasagna noodles directly into the simmering soup. Cook for 1-2 minutes less than package directions, stirring occasionally to prevent sticking.
  • Gently stir in the spinach, cooking just until it wilts, which should take about 1 minute. Taste and adjust the seasoning if needed.
  • Remove the pot from heat and carefully mix in the cottage cheese, allowing it to retain its lovely texture without becoming too creamy.
