  • Add 1 medium diced yellow onion; sauté for 3-5 minutes until softened.
  • Stir in 3 minced garlic cloves, cooking for 1 additional minute.
  • Mix in 3 tablespoons of tomato paste; cook for 2-3 minutes until it darkens.
  • Add 2 pounds of ground beef, 2 teaspoons of kosher salt, and 1/2 teaspoon of black pepper. Cook for 6-8 minutes until browned.
  • Stir in spices: 2 tablespoons of chili powder, 1 tablespoon of ground cumin, 1 tablespoon of cocoa powder, 2 teaspoons of dried oregano, 1 teaspoon of paprika, and 1/4 teaspoon of cayenne. Cook for 1 minute.
  • Add 2 cans of kidney beans, 1 can of fire-roasted crushed tomatoes, and 1 can of broth. Bring to a boil.
  • Lower heat to simmer, cook for 30-40 minutes until thickened.
  • Stir in 1 teaspoon of apple cider vinegar; taste and adjust seasoning.
