  • 1 can Kidney Beans drained and rinsed
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 1 can Diced Tomatoes with Green Chilies use crushed or fresh if needed
  • 4 cups Beef Broth or vegetable broth for a vegetarian option

Seasoning

  • 2 tbsp Taco Seasoning store-bought or homemade
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Toppings

  • 1 cup Cheddar Cheese shredded, or use Monterey Jack
  • 0.5 cup Sour Cream or plain yogurt
  • 0.25 cup Fresh Cilantro chopped, optional

Preparation

  • Brown the Beef: In a large pot over medium heat, cook the ground beef along with chopped onion and minced garlic until the beef is browned, about 5-7 minutes. Drain any excess fat.
  • Add the Seasoning: Stir in the taco seasoning, ground cumin, chili powder, salt, and pepper, coating the meat and onions.
  • Combine the Ingredients: Add kidney beans, black beans, corn, diced tomatoes with green chilies, and beef broth. Stir everything until well mixed.
  • Simmer the Soup: Bring to a boil, reduce heat to low, and simmer uncovered for 20-30 minutes, stirring occasionally.
  • Taste and Serve: Adjust seasoning if necessary and serve topped with shredded cheddar cheese, sour cream, and fresh cilantro.
