  • In a large pot, melt butter and olive oil over medium heat until the butter is foaming but not browned.
  • Add chopped onion, carrots, celery, salt, and pepper. Sauté for about 5-7 minutes until softened and slightly golden.
  • Stir in minced garlic and cook for an additional 1 minute until fragrant.
  • Pour in the wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2-3 minutes until almost evaporated.
  • Sprinkle in the flour, stirring continuously for 1-2 minutes.
  • Gradually whisk in the chicken stock, simmering for about 5 minutes until thickened slightly.
  • Stir in half-and-half, thyme, and Italian seasoning, allowing them to meld.
  • Bring the soup to a gentle simmer and add the gnocchi, cooking for 3-5 minutes.
  • Mix in the shredded rotisserie chicken and fresh spinach, heating through for about 2-3 minutes.
  • Season to taste with nutmeg, salt, and pepper.
  • Ladle into bowls and top with additional Parmesan cheese and freshly cracked pepper.
