How to Make Easy Crock Pot 15 Bean Soup

  • Start by dicing the carrots, onion, celery, poblano, and red bell pepper. Mince the garlic, ensuring all pieces are uniformly sized for even cooking.
  • Thoroughly rinse the 20 oz bean soup mix under cold water to remove any excess starch, then place the beans in the crock pot.
  • Add the prepared vegetables, minced garlic, 3.5 cups diced turkey, bay leaf, oregano, black pepper, and liquid smoke into the crock pot, mixing everything evenly.
  • Pour in 8 cups of water over the mixture, stir gently, then cover the crock pot and set it to HIGH, cooking for 7 hours or until the beans are tender.
  • In the last hour of cooking, add the 28 oz of crushed tomatoes and 0.75 oz of lemon juice. Adjust the seasoning to taste, enhancing the flavor just before serving.
  • If the soup is too thick, simply add a bit more water; if it’s too thin, simmer uncovered on LOW for 15-20 minutes to thicken.
