How to Make Cream Cheese Stuffed Mini Peppers

  • Halve the mini bell peppers carefully and remove their seeds. You can choose to keep the stems intact for a lovely presentation or remove them if you prefer.
  • In a mixing bowl, combine softened cream cheese, shredded sharp cheddar cheese, chives, garlic powder, onion powder, and black pepper. Mix until well combined and creamy, with no lumps in sight.
  • Using a small spoon, generously stuff each pepper half with the cream cheese mixture. Ensure they’re filled to the brim for that perfect creamy bite!
  • Serve your stuffed peppers fresh and cold, or prepare for roasting! If roasting, preheat your oven to 400°F, place the stuffed peppers on a baking sheet, and roast for 8 minutes. Then, switch to broil for 1-2 minutes until the tops are beautifully browned.
  • Once done, garnish them with additional chives or a sprinkle of crushed red pepper flakes for an added kick. They’re ready to shine at your next gathering!

Notes

Drizzle with a light ranch dressing before serving for an extra layer of flavor. These peppers can be made ahead and stored for convenience.
