  • 2 pounds Russet Potatoes Use Yukon Gold for extra creaminess.

For the Creamy Mixture

  • 1 cup Mascarpone Cheese Ensure it's at room temperature.
  • 1/2 cup Heavy Cream Can swap for milk or omit.
  • 1/4 cup Salted Butter Soften before mixing.

For Seasoning & Garnish

  • 1 teaspoon Salt Salt the cooking water generously.
  • 1/3 cup Parmesan Cheese Use freshly grated for best flavor.

Preparation

  • Start by peeling the russet potatoes and cutting them into 2-inch chunks.
  • In a large pot, bring salted water to a rolling boil.
  • Add the potatoes and let them cook for 10-12 minutes until fork-tender.
  • Allow your mascarpone cheese and butter to come to room temperature.
  • Once cooked, carefully drain the potatoes in a colander.
  • Return the drained potatoes to the pot.
  • With a potato masher, mash them to your desired consistency.
  • Gently fold in the mascarpone, softened butter, heavy cream, Parmesan, and a pinch of salt.
  • Taste the potatoes and adjust the salt as necessary.
  • Transfer the potatoes to a serving bowl and enjoy while warm.
