Ingredients
  

For the Pasta

  • 1 pound dried orzo regular or gluten-free
  • 4 cups vegetable or chicken stock

For the Creamy Sauce

  • 1 cup whole milk cottage cheese small or medium curds preferred
  • 1 cup grated parmesan cheese or substitute with feta or other cheeses
  • 2 large eggs

For Seasoning

  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon black pepper freshly ground preferred

Cooking Instructions

  • In a medium pot, mix 1 pound of dried orzo with 4 cups of vegetable or chicken stock.
  • Heat over medium-high and stir frequently until the stock is mostly absorbed and the orzo is al dente, about 12-15 minutes.
  • While the orzo is cooking, blend 1 cup of whole milk cottage cheese, 1 cup of grated parmesan, 2 large eggs, kosher salt, and black pepper in a mini food processor until smooth.
  • Once the orzo is cooked and tender, remove it from the heat and stir in the cheese mixture until combined.
  • Taste and adjust salt and pepper as needed before serving hot.

Notes

For best results, serve immediately after mixing. Store leftovers in an airtight container for up to 4 days, adding broth or milk when reheating.
