For the Casserole

  • 1 tablespoon Olive Oil Can substitute with canola or vegetable oil.

  • 2 cups Low-Sodium Chicken Broth Vegetable broth works for vegetarian.
  • 1 cup Whole Milk Replace with non-dairy milk if needed.
  • 2 cups Broccoli Florets Frozen is acceptable if moisture is removed.
  • 1 cup Shredded Sharp Cheddar Cheese Other cheeses like Monterey Jack can be used.
  • ¼ teaspoon Black Pepper Optional for those who prefer no spice.
  • 1 cup Cooked Long Grain White Rice Leftover or pre-cooked rice works best.

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground turkey and ¼ teaspoon of kosher salt. Brown the turkey for about 5-7 minutes, stirring occasionally until no longer pink.
  • In the same skillet, add another tablespoon of olive oil if necessary, then sauté 1 diced yellow onion with ¼ teaspoon of kosher salt for 4-5 minutes until soft and translucent. Stir in 2 cloves of minced garlic for another 30 seconds.
  • Sprinkle in 2 tablespoons of all-purpose flour, stirring for about 1 minute. Gradually whisk in 2 cups of low-sodium chicken broth and 1 cup of whole milk. Simmer for about 3 minutes until thickened. Fold in 2 cups of broccoli florets and cook until vibrant green (about 2-3 minutes).
  • Mix 1 cup of shredded sharp cheddar cheese into the sauce until melted. Combine the cooked rice and turkey in the baking dish, pour the cheesy sauce over and stir to combine.
  • Sprinkle remaining cheddar cheese on top. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until bubbly and golden. Let it sit for a few minutes before serving.

Notes

Garnish with fresh parsley for added color and flavor. Adjust seasonings to preference.
