  • 2 cups broccoli florets frozen, thawed and drained
  • 1 cup cooked bacon can use turkey bacon
  • 3 cups cooked chicken rotisserie or leftover
  • 2 cloves minced garlic fresh preferred
  • 1 cup shredded mozzarella can substitute with Gouda or Monterey Jack
  • 1 cup shredded cheddar sharp cheddar is recommended
  • 1/2 cup ranch dressing consider low-calorie or homemade

Cooking Instructions

  • Preheat your oven to 375°F (191°C).
  • Thaw and squeeze out excess water from frozen spinach or blanch fresh broccoli in boiling water for 1-2 minutes.
  • In a large mixing bowl, combine cooked chicken, bacon, broccoli, minced garlic, ranch dressing, mozzarella, and cheddar. Mix until well blended.
  • Transfer the mixture into a greased 9x13 inch casserole dish, spreading it evenly.
  • Sprinkle remaining mozzarella and cheddar over the top.
  • Bake for about 15 minutes, until the top is bubbly and golden brown.
  • Allow to cool slightly before serving. Optional: garnish with fresh parsley.

Notes

Drain cooked broccoli thoroughly to avoid a watery casserole. Assemble the casserole a day in advance for convenience.
