Ingredients
  

For the Pasta

  • 8 oz elbow macaroni classic shape for cheese sauce

For the Cheese Sauce

  • 2 tbsp butter or use olive oil for a lighter version
  • 2 tbsp all-purpose flour can use gluten-free flour
  • 1 tsp salt adjust based on your dietary needs
  • 1/2 tsp ground black pepper or use white pepper for a milder taste
  • 2 cups milk whole milk preferred; can use almond or oat milk
  • 1 cup half and half or use more milk
  • 2 cups shredded cheddar cheese try a cheese blend for more flavor

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and grease an 8-inch square baking dish lightly.
  • Cook the elbow macaroni until al dente according to the package instructions, about 7-8 minutes. Drain and set aside.
  • Melt the butter in a medium saucepan over medium heat. Blend in the flour, salt, and pepper, cooking for about 2 minutes until lightly golden.
  • Slowly add the milk and half and half, stirring constantly. Cook over medium-low heat for 5-7 minutes, until thickened. Remove from heat and stir in 1 cup of shredded cheese.
  • Combine the cooked macaroni with the cheese sauce. Pour half of the mixture into the greased baking dish, sprinkle 1/2 cup of cheese on top, layer the remaining pasta mix, and top with the rest of the cheese.
  • Bake for 15-20 minutes, until the cheese is melted and bubbly and the surface is golden brown.

Notes

Optional: Sprinkle with fresh herbs or paprika for extra flavor. Store leftovers in an airtight container for up to 3 days.
