Ingredients
  

For the Cheese Mixture

  • 8 oz Extra-sharp Cheddar cheese freshly grated
  • 4 oz Cream cheese softened
  • 1 cup Pimento peppers well-drained

For Flavoring

  • 1/2 cup Mayonnaise or Greek yogurt
  • 1 tsp Garlic powder or fresh garlic
  • 1 tsp Onion powder or grated fresh onion
  • 1/4 tsp Ground cayenne pepper to taste
  • 1 tsp Jalapeño pepper optional, seeds removed

To Taste

  • 1/2 tsp Freshly ground black pepper to taste
  • 1/4 tsp Salt preferably sea salt

How to Make Pimento Cheese

  • In a large mixing bowl or the bowl of your stand mixer, combine the freshly grated cheddar, softened cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper, jalapeño (if desired), and several twists of black pepper.
  • Beat the mixture together using a hand mixer, stand mixer, or by hand with a sturdy wooden spoon or spatula until everything is well blended and creamy.
  • Take a moment to taste your creation! Add more black pepper or salt as needed for flavor. If you crave a bit more spice, toss in another pinch of cayenne and mix again.
  • Transfer your delicious mixture to a smaller serving bowl. You can serve it immediately, or cover and chill in the refrigerator for up to one week. If you choose to chill it, let it sit at room temperature for 30 minutes to soften before serving.

Notes

Serve with an array of crackers, fresh veggies, or as a spread on fresh bread for a delightful snack experience.
