How to Make Creamy Pioneer Woman Potato Soup

  • Cut bacon into small pieces and cook them in a large pot over medium heat until crispy, about 5-7 minutes. Remove the bacon and set it aside, leaving some of the fat in the pot.
  • Add chopped onion to the pot and sauté for 3-4 minutes until it turns translucent. Stir in minced garlic for an additional 30 seconds.
  • Toss in diced carrots, celery, and potatoes, stirring well. Season with salt, pepper, and Cajun spice.
  • Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat and let it simmer for about 10-15 minutes, or until the potatoes are tender.
