Ingredients
  

For the Base

  • 2 cans Hatch Green Chiles Can be replaced with other green chiles if unavailable.
  • 1 large White Onion Yellow onion is an acceptable substitute.
  • 2 cloves Garlic Minced; powdered garlic can be substituted.
  • 1.5 pounds Chicken Thighs Preferred for moistness; chicken breasts may dry out.
  • 1 teaspoon Black Pepper Adjust to taste.
  • 1 teaspoon Salt Adjust depending on broth's saltiness.

For the Beans and Cream

  • 2 cans Great Northern Beans Other white beans work too.
  • 1 cup Frozen Corn Fresh corn kernels can be used.
  • 1 cup Heavy Cream Can be replaced with half-and-half.

For the Flavoring

  • 1 packet Ranch Seasoning Use half packet for balance.
  • 2 tablespoons Chili Powder Swap with paprika for milder taste.
  • 1 teaspoon Ground Cumin Can be omitted if desired.

For the Liquid

  • 4 cups Chicken Broth Vegetable broth can be used.
  • 1 cup Green Salsa Fresh or jarred varieties acceptable.

Optional Garnishes

  • 1 medium Avocado Use as topping.
  • 2 units Limes Serve cut into wedges.
  • Cilantro Omit if not preferred.

Instructions
 

Preparation

  • Start by dicing the white onion and mincing the garlic. Pat the chicken thighs dry and season them generously with salt and black pepper.
  • Place the seasoned chicken thighs at the bottom of your slow cooker. Top with the diced onion and minced garlic.
  • In a separate bowl, combine the ranch seasoning, ground cumin, and chili powder. Sprinkle this over the chicken and veggies.
  • Pour in the green salsa, rinsed Great Northern beans, Hatch green chiles, frozen corn, and chicken broth. Stir to combine.
  • Set your slow cooker to LOW and cook for 6-8 hours.
  • Once cooked, shred the chicken and return it to the slow cooker. Switch to HIGH to keep warm.
  • Pour in the heavy cream and stir gently, then cook for an additional 10 minutes.
  • Taste and adjust seasoning with salt and black pepper if needed.
  • Ladle the chili into bowls, inviting everyone to add their own garnishes.
