Instructions
Preparation
Start by dicing the white onion and mincing the garlic. Pat the chicken thighs dry and season them generously with salt and black pepper.
Place the seasoned chicken thighs at the bottom of your slow cooker. Top with the diced onion and minced garlic.
In a separate bowl, combine the ranch seasoning, ground cumin, and chili powder. Sprinkle this over the chicken and veggies.
Pour in the green salsa, rinsed Great Northern beans, Hatch green chiles, frozen corn, and chicken broth. Stir to combine.
Set your slow cooker to LOW and cook for 6-8 hours.
Once cooked, shred the chicken and return it to the slow cooker. Switch to HIGH to keep warm.
Pour in the heavy cream and stir gently, then cook for an additional 10 minutes.
Taste and adjust seasoning with salt and black pepper if needed.
Ladle the chili into bowls, inviting everyone to add their own garnishes.
