Ingredients
  

For the Sauce

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk or low-fat milk
  • 1 cup vegetable broth or chicken broth
  • 3 cloves garlic grated
  • 1 tablespoon fresh thyme leaves or rosemary
  • 1 teaspoon sea salt or kosher salt
  • 1/2 teaspoon freshly ground black pepper or white pepper

For the Potatoes

  • 3 pounds Yukon Gold potatoes
  • 1 medium yellow onion or red onion

For the Topping

  • 1.5 cups grated cheddar cheese consider a sharp variety

Preparation

  • Preheat the oven to 400°F and grease a 9x13-inch baking dish with butter.
  • Melt the butter in a medium skillet over medium heat. Whisk in the flour for 1 minute until bubbly, then gradually add the milk and vegetable broth. Cook for another 2-3 minutes, stirring often, until the sauce is creamy.
  • Layer half of the sliced Yukon Gold potatoes at the bottom of the prepared baking dish. Top with half the onion, then drizzle with half the sauce and sprinkle with 1 cup of cheddar cheese. Repeat these layers with the remaining potatoes, onion, sauce, and finish with ½ cup cheese on top.
  • Cover the dish with foil and bake for 30 minutes. Uncover and continue to bake for an additional 35-40 minutes until the potatoes are tender and the cheese is browned. Let the dish sit for 20 minutes before serving.

Notes

Consider garnishing with fresh thyme or parsley just before serving for a pop of color.
