Ingredients
  

For the Pasta

  • 8 oz Uncooked fusilli pasta

For the Shrimp

  • 1 lb Shrimp (31-40 size)

For the Vegetables

  • 1 cup Celery chopped
  • 1 medium Red onion chopped

For the Dressing

  • 1 cup Mayo
  • 1 tbsp Dijon mustard
  • 2 tbsp Lemon juice
  • 1 tbsp Lemon zest
  • 1 tsp Garlic powder
  • 2 tbsp Fresh dill chopped
  • 2 tbsp Olive oil

Seasoning

  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Smoked paprika optional

Steps to Prepare

  • Boil the Pasta: Bring a salted pot of water to a boil, add the fusilli pasta, and cook until al dente, about 8-10 minutes. Drain and rinse with cool water.
  • Prep the Shrimp: Rinse the shrimp under cool water to thaw. Peel, devein, and prepare an ice bath.
  • Cook the Shrimp: Boil water, add shrimp, and cook for 2-3 minutes until opaque. Transfer to the ice bath.
  • Combine Ingredients: Chop celery and red onion, then mix them with drained pasta and shrimp in a large salad bowl.
  • Make the Dressing: Whisk mayo, Dijon mustard, lemon juice, lemon zest, garlic powder, dill, and olive oil until smooth.
  • Mix it All Together: Add dressing to the salad and toss to coat. Season with salt, pepper, and smoked paprika if desired.
  • Chill and Serve: Cover salad and chill for at least 30 minutes before serving.

Notes

For best results, allow the salad to chill for the recommended time to enhance the flavors.
