Filling

  • 1 lb Ground Turkey 93/7 or 85/15 fat content recommended
  • 1 tbsp Olive Oil For sautéing
  • 1 medium White Onion Finely diced
  • 1 cup Carrots Diced
  • 2 cups Cabbage Shredded
  • 2 cloves Garlic Minced
  • 1 tbsp Ginger Grated
  • 2 stalks Green Onion Sliced

Seasoning

  • 2 tbsp Soy Sauce Low-sodium recommended
  • 1 tbsp Rice Vinegar
  • 1 tbsp Toasted Sesame Oil
  • 1/2 tsp Black Pepper

Assembly

  • 24 pieces Egg Roll Wrappers
  • 1 large Egg Mixed with water
  • spray Spray Oil For baking

Instructions
 

Preparation

  • Dice the onion, shred the cabbage, and dice the carrots. Mince the garlic, grate the ginger, and slice the green onion.
  • Sauté the onion in olive oil over medium heat until translucent. Add the minced garlic and grated ginger, then stir in the cabbage and carrots, cooking until softened, about 5-7 minutes.
  • In a separate skillet, cook the ground turkey over medium heat until browned, about 6-8 minutes, draining excess liquid.
  • Combine the cooked turkey with sautéed vegetables in a large bowl. Stir in soy sauce, rice vinegar, sesame oil, green onion, and black pepper. Let it cool for 5 minutes.
  • Place about 2 tablespoons of filling in each egg roll wrapper, fold, and seal with egg wash.
  • Arrange egg rolls on a baking sheet lined with parchment paper, spray with oil, and bake at 400°F for 15 minutes or until golden brown and crispy.

Notes
