Ingredients
  

  • **For the Base:**
  • - 2 pita bread rounds
  • **For the Filling:**
  • - 3 breakfast sausage links
  • - 1/4 onion finely chopped
  • - 2 tbsp olive oil
  • - 4 eggs beaten
  • - 1/2 tomato diced
  • - 1/2 cup chopped spinach
  • - 1/2 cup shredded cheddar cheese
  • - Salt & pepper to taste
  • - 1 avocado sliced (for topping)

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  • Cook sausage in skillet until browned; transfer to plate.
  • Sauté onion, remove, then scramble eggs until just set.
  • Place pita on baking sheet. Layer eggs, sausage, onion, tomato, spinach, cheese.
  • Bake 10–12 minutes until cheese melts and pita is crisp.
  • Top with sliced avocado and serve warm.
