For the Dough

  • 2 cups all-purpose flour Can use a 1:1 gluten-free flour blend.
  • 1 tbsp baking powder No substitutions recommended.
  • 1 tsp salt Essential ingredient; do not omit.
  • 1/4 cup refined coconut oil Other neutral oils like avocado or sunflower oil can be used.
  • 3/4 cup warm water Heat until warm, but not hot.

For Frying

  • 2 cups neutral vegetable oil Canola, peanut, or corn oil work well.

For Coating

  • 1 cup cane sugar Organic granulated sugar can be used.
  • 1 tbsp cinnamon Use Ceylon cinnamon for best flavor; omit if not desired.

How to Make Bunuelos

  • Prepare the Dough: Sift together the all-purpose flour, baking powder, and salt into a mixing bowl. Pour in melted coconut oil and warm water, stirring until a cohesive dough forms—soft and slightly sticky.
  • Knead the Dough: Transfer the dough to a floured surface and knead for about 10-15 minutes until smooth and elastic. If too dry, add more warm water.
  • Rest the Dough: Divide the dough into eight equal pieces, roll each into a ball, and gently flatten them. Cover with a damp towel and let rest for 30 minutes.
  • Roll It Out: Take each ball and roll it out into thin discs, stretching until nearly transparent, ensuring even thickness.
  • Fry the Bunuelos: Heat your neutral vegetable oil in a deep fryer or large pot to 350-375°F. Fry each disc for 30-45 seconds per side until golden brown and crispy.
  • Coat and Serve: Once fried, let the bunuelos drain on paper towels. While still warm, sprinkle with the cinnamon-sugar mixture.

Notes
