  • 2 pounds small yellow potatoes Yukon Gold or red potatoes are great substitutes.
  • 2 tablespoons olive oil Can be swapped with vegetable or canola oil.
  • 1 teaspoon salt Adjust to personal taste.
  • 1 teaspoon black pepper Freshly cracked pepper is recommended.
  • 1 teaspoon garlic salt Fresh minced garlic with a dash of salt can be used in a pinch.
  • 1 teaspoon smoked paprika Regular paprika can suffice if needed.

For the Toppings

  • 2 cups sharp cheddar cheese Any good melting cheese like Monterey Jack works as a substitute.
  • 1 cup bacon Try turkey bacon or crumbled tempeh for a vegetarian twist.
  • 1/2 cup green onions Chives or diced red onions can be a wonderful alternative.
  • 1 cup sour cream Greek yogurt is a healthier substitute if preferred.
  • 1/4 cup fresh parsley Great for garnishing, optional.

How to Make Irish Nachos

  • Preheat the oven to 425°F and lightly grease a baking sheet, placing it in the warm oven.
  • Toss the sliced small yellow potatoes in a bowl with olive oil, salt, pepper, garlic salt, and smoked paprika.
  • Spread the seasoned potatoes in a single layer on the hot baking sheet. Bake for 25-30 minutes, flipping them halfway.
  • Remove the baking sheet from the oven and sprinkle shredded cheddar cheese and crumbled bacon over the potatoes.
  • Top your crispy nachos with fresh green onions and a dollop of sour cream. If desired, sprinkle with parsley for garnish.
