  • 2 pounds Yukon Gold Fingerling Potatoes Feel free to swap with red or purple potatoes for variety.

For the Cheese Mixture

  • 1 cup Freshly Grated Parmesan Cheese Star ingredient for cheesy flavor; Pecorino Romano can be a substitute.
  • 1 teaspoon Garlic Powder Adjust according to your taste preference.
  • 1 teaspoon Paprika Optional for an extra hint of smokiness and color.
  • 0.5 teaspoon Black Pepper Adjust according to your heat preference.
  • 1 teaspoon Salt Don't forget to adjust to your taste!
  • 1 teaspoon Lemon Pepper Can be omitted or swapped with your favorite herbs.

Directions

  • Preheat your oven to 400°F (200°C).
  • Grease the bottom of a 9x13 glass baking dish with olive oil.
  • In a bowl, combine the freshly grated Parmesan cheese with garlic powder, paprika, black pepper, salt, and lemon pepper.
  • Spread the cheese and spice mixture evenly in the greased baking dish.
  • Place the halved Yukon Gold fingerling potatoes cut-side up on top of the cheese layer. Drizzle or spray them with olive oil and season with salt and pepper.
  • Bake in the preheated oven for about 30 minutes, or until knife-tender and the crust is golden-brown.
  • Allow to cool for 5 minutes before serving with the crispy side up.

Notes

Optional: Drizzle with a little extra olive oil before serving for added richness.
