  • Preheat the oven to 425°F.
  • Combine the potatoes in a large bowl. Drizzle them with olive oil and toss well to evenly coat. Season generously with kosher salt and pepper.
  • Spread the potatoes out on a baking sheet in a single layer. Roast for 25 minutes, then gently flip and toss. Roast for an additional 15-20 minutes until they are golden brown and crisp.
  • Cook the ground turkey in a skillet over medium heat. Use a wooden spoon to break it apart while it cooks.
  • Season the turkey by stirring in cumin, smoked paprika, garlic powder, and chili powder along with salt and pepper.
  • Create a saucy mixture (if desired) for the taco meat. Mix ½ cup of cold water or stock with 1½ tablespoons of flour in a shaker, then slowly stream this slurry into the skillet while stirring.
  • Assemble your bowls by layering the crispy potatoes at the bottom. Add the cooked turkey, followed by your favorite toppings.
