How to Make Tasty Roasted Chickpeas and Edamame

  • Drain and rinse the canned chickpeas thoroughly. Pat them dry with paper towels.
  • If using frozen edamame, thaw it and pat it dry with paper towels.
  • In a large bowl, combine chickpeas and edamame with olive oil, salt, pepper, and smoked paprika. Toss until evenly coated.
  • Let the mixture sit for a few minutes to allow flavors to meld.
  • Preheat your oven to 425°F (220°C).
  • Spread the mixture evenly on a baking sheet in a single layer.
  • Roast in the oven for about 20 minutes, stirring halfway through.
  • Taste and adjust seasonings if necessary. Best enjoyed warm or at room temperature.

Notes

Store in an airtight container for up to 3 days at room temperature or up to a week in the fridge. To revive crispiness, reheat in the oven.
