Cooking Steps

  • Cut bacon into 1-inch pieces and cook in a skillet over medium heat until crisp, about 8-10 minutes. Remove the bacon and reserve the delicious drippings.
  • Remove the tough stems from the collard greens, then chop the leaves into 2-3 inch pieces. Dice the onion and mince the garlic.
  • In a large bowl, whisk together the chicken stock, reserved bacon drippings, apple cider vinegar, and crushed red pepper.
  • Lightly oil the slow cooker, then add the collard greens, onions, and garlic. Pour the braising liquid over and stir gently.
  • Cover and set the slow cooker to low for 10 hours.
  • Before serving, season with salt and black pepper to taste. Stir in the reserved bacon.

Notes
