  • 1 medium Yellow Onion can substitute with shallots
  • 1 head Cabbage green or savoy cabbage

For the Veggies

  • 1 lbs Baby Potatoes regular potatoes can be used if diced
  • 1 lbs Baby Carrots or use regular-sized carrots cut into chunks

For the Broth

  • 4 cups Chicken Stock or beef broth for a more intense flavor

Cooking Steps

  • Layer Vegetables: Place baby potatoes and baby carrots at the bottom of your slow cooker.
  • Prep Aromatics: Add chopped yellow onion and cabbage wedges around the edges.
  • Add Corned Beef: Center the corned beef brisket on top of the veggies and sprinkle the included spice packet over the meat.
  • Pour Stock: Pour chicken stock into the slow cooker.
  • Cook Low and Slow: Cover and cook on low for 8-9 hours.
  • Slice and Serve: Remove the brisket, let it rest, then slice against the grain.

Notes
