Ingredients
  

  • - 4 boneless skinless chicken breasts or 6–8 thighs
  • - 1 tbsp olive oil
  • - 1½ cups low-sodium chicken broth
  • - 3 cloves garlic minced
  • - ½ tsp Italian seasoning
  • - ½ tsp paprika
  • - ½ tsp onion powder
  • - ½ tsp salt
  • - ¼ tsp black pepper
  • - ½ cup sun-dried tomatoes chopped
  • - ½ cup heavy cream or half-and-half
  • - ⅓ cup grated Parmesan cheese
  • - Fresh basil chopped (optional)

Instructions
 

  • Sear chicken in olive oil for 2–3 minutes per side (not fully cooked).
  • In slow cooker, whisk broth, garlic, and seasonings.
  • Add chicken and sun-dried tomatoes.
  • Cover and cook on LOW for 3–4 hours.
  • Remove chicken. Stir in cream and Parmesan. Return chicken and coat in sauce.
  • Garnish and serve with your favorite sides.

Notes

- Use chicken thighs for extra richness
- Add red pepper flakes for heat
- Not ideal for freezing (cream may separate)
