Ingredients
- 4 boneless skinless chicken breasts
or 6–8 thighs
- 1 tbsp olive oil
- 1½ cups low-sodium chicken broth
- 3 cloves garlic
minced
- ½ tsp Italian seasoning
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup sun-dried tomatoes
chopped
- ½ cup heavy cream
or half-and-half
- ⅓ cup grated Parmesan cheese
- Fresh basil
chopped (optional)
Instructions
Sear chicken in olive oil for 2–3 minutes per side (not fully cooked).
In slow cooker, whisk broth, garlic, and seasonings.
Add chicken and sun-dried tomatoes.
Cover and cook on LOW for 3–4 hours.
Remove chicken. Stir in cream and Parmesan. Return chicken and coat in sauce.
Garnish and serve with your favorite sides.
Notes
- Use chicken thighs for extra richness
- Add red pepper flakes for heat
- Not ideal for freezing (cream may separate)
