Preparation Steps

  • Preheat your oven to 375°F.
  • Prepare the bell peppers by slicing off the tops and removing the seeds.
  • Spread 1 cup of marinara sauce evenly in a 9x13 inch baking dish.
  • Arrange the prepared bell peppers upright in the dish.
  • Heat olive oil in a skillet over medium-high heat, then add the onion with a pinch of salt. Sauté until soft, about 3-5 minutes.
  • Add the ground beef to the skillet, breaking it up as it browns, which should take about 5-7 minutes.
  • Stir in salt, Italian seasoning, garlic powder, and red pepper flakes to the cooked beef and onions.
  • Remove from heat and mix in the fully cooked rice, parsley, basil, ½ cup Parmesan, and remaining marinara.
  • Fill each pepper with the beef mixture, generously packing it in, and top with the remaining Italian cheese blend.
  • Cover the dish with foil and bake for 30-35 minutes.
  • Uncover the dish and bake for an additional 5-10 minutes.
  • Let rest for 2-3 minutes before serving.
