  • 2 tablespoons Olive Oil extra virgin preferred
  • 2 tablespoons Lemon Juice freshly squeezed

For the Base

  • 2 cups Rice or Quinoa

For the Fresh Vegetables

  • 1 cup Cucumber preferably Persian
  • 1 cup Tomatoes such as cherry tomatoes
  • 1 cup Bell Peppers mixed colors

For the Tzatziki Sauce

  • 1 cup Yogurt dairy-free alternative can be used
  • 2 cloves Garlic minced
  • 1 tablespoon Dill fresh or dried

Preparation Steps

  • Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, and seasonings. Pound chicken to 1/2 inch thickness, ensuring even cooking. Place in marinade and refrigerate for at least 30 minutes.
  • Prepare Tzatziki: In another bowl, mix together yogurt, grated cucumber, minced garlic, lemon juice, and dill. Stir well and let it sit in the fridge for about 30 minutes.
  • Cook Base: Prepare your rice or quinoa according to package instructions.
  • Cook Chicken: Preheat air fryer to 380°F. Air fry marinated chicken for 7 minutes, then flip and cook for an additional 3-4 minutes until cooked through.
  • Rest and Slice Chicken: Let cooked chicken rest for 5 minutes before slicing into bite-sized pieces.
  • Assemble Bowls: Start with a scoop of rice or quinoa, add fresh veggies and sliced chicken, then drizzle with tzatziki.
