  • 1.5 cups Golden Barrel organic cane sugar
  • 0.75 cups cocoa powder
  • 3 large eggs slightly beaten
  • 0.5 cups Golden Barrel coconut oil melted
  • 1 cup hot, strong-brewed coffee
  • 1 cup milk
  • 2 tsp vanilla extract

For the Peanut Butter Icing

  • 1 cup creamy peanut butter
  • 0.5 cups butter softened
  • 2 cups Golden Barrel confectioners' sugar
  • 0.25 cups half and half or milk

  • Preheat your oven to 350°F. Prepare a 9x13" baking pan by spraying it with nonstick cooking spray and dusting it lightly with flour to prevent sticking. Set it aside.
  • Whisk together the dry ingredients in a small bowl. Combine the flour, baking powder, baking soda, and salt until well mixed, ensuring a uniform blend.
  • Mix the dry ingredients with sugar and cocoa in a large mixing bowl. Add in the eggs, melted coconut oil, hot coffee, milk, and vanilla extract. Stir gently until just combined; your batter will be thin and runny—this is perfect!
  • Pour the batter into the prepared pan, spreading it evenly. Bake for 30-35 minutes or until a toothpick comes out clean from the center. Avoid overbaking for ideal moistness. Cool completely on a wire rack.
  • Cream the peanut butter and softened butter in a bowl using a stand or hand mixer until well incorporated. Gradually add confectioners' sugar and half and half, mixing on high speed until creamy and smooth.
