How to Make Red Velvet Cheesecake Brownies

  • Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking dish by spraying it with cooking spray.
  • Melt ¾ cup of unsalted butter and 4 oz. of semisweet chocolate chips together in a medium saucepan over low heat until smooth.
  • Combine 1 cup of granulated sugar, ½ cup of light brown sugar, 2 large eggs, and 2 teaspoons of pure vanilla extract with your melted chocolate mixture in a large bowl.
  • Incorporate 1 cup of all-purpose flour, 3 tablespoons of unsweetened cocoa powder, and 1 teaspoon of kosher salt.
  • Separate about 1 cup of the brownie batter into another bowl for the cheesecake swirl.
  • Beat 8 oz. of softened cream cheese with ¼ cup of granulated sugar in a separate bowl until smooth.
  • Layer half of the brownie batter into the prepared baking dish, spread the cheesecake mixture over it, and then add the reserved brownie batter on top.
  • Swirl the two batters together using a knife or toothpick.
  • Bake in the preheated oven for about 30-35 minutes.
  • Cool the brownies in the pan for at least 20 minutes before cutting them into squares.
