How to Make Smooth White Chocolate Truffles

  • Combine white chocolate chips and chopped chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the mixture is smooth and glossy.
  • Stir in the room-temperature heavy cream and vanilla extract until fully combined. The ganache should be glossy and velvety.
  • Cover the bowl with plastic wrap and refrigerate the ganache for 2-3 hours, or until firm enough to scoop.
  • Using a small scoop or two spoons, form 1-inch balls with the chilled ganache and place them on a parchment-lined tray.
  • In a separate bowl, melt additional chopped white chocolate in intervals, stirring frequently until smooth. Cool to about 85-90°F.
  • Dip each truffle into the melted chocolate, gently tapping off the excess and adding toppings before the chocolate sets.
  • Let the coated truffles sit at room temperature for 30-45 minutes until the chocolate hardens. Optionally, dust with powdered sugar.

Notes

Store truffles in an airtight container for up to 3 days at room temperature or refrigerate for up to 2 weeks. Freeze for up to 3 months.
