Ingredients
  

For the Filling

  • 10 oz Ground Chicken can be substituted with turkey or extra-firm tofu
  • 1 tablespoon Sesame Oil or olive oil for a lighter taste
  • 0.25 cup Onion, diced white onion is a good replacement
  • 2 cloves Garlic fresh is best, but dried can work too
  • 1 tablespoon Fresh Minced Ginger ginger paste can also be used
  • 0.25 cup Tamari or Soy Sauce use Tamari for gluten-free; coconut aminos are an alternative
  • 2 tablespoons Thai Sweet Red Chili Sauce homemade options or mix of sriracha and honey work well
  • 1 juice of Lime lemon juice may be used as an alternative
  • 1 teaspoon Maple Syrup or Honey agave syrup is an effective substitute
  • 0.33 cup Cashews, chopped peanuts can be switched in as well
  • 0.25 cup Scallions, chopped chives can serve as a nice replacement
  • 0.25 cup Cilantro, chopped parsley can stand in if needed
  • 0.25 cup Carrots, shredded bell peppers are a great alternative
  • Sesame Seeds for garnishing; feel free to omit

For the Wrap

  • 1 head Butter Lettuce romaine or endive can be substituted

Instructions
 

Cooking Instructions

  • Heat sesame oil in a medium-high pan until fragrant. Sauté diced onions for about 2-3 minutes until translucent, then stir in minced garlic and ginger for another 2 minutes.
  • Add ground chicken, breaking it apart with a wooden spoon. Season with salt and pepper, cooking until golden brown for about 3-4 minutes.
  • In a separate bowl, mix Tamari or soy sauce, Thai sweet red chili sauce, lime juice, and maple syrup or honey.
  • Stir the hot sauce and chopped cashews into the chicken mixture, tossing well to coat. Reduce heat and let simmer for 2 minutes.
  • Remove from heat and mix in shredded carrots, chopped scallions, and fresh cilantro.
  • Spoon the chicken mixture into butter lettuce leaves. Top with extra sauce and a sprinkle of sesame seeds if desired.

Notes

Assemble wraps just before serving to maintain crispness. Serve with lime wedges and extra chili sauce for dipping.
