  • 1 cup Cottage Cheese Small curd for creaminess
  • 2 tbsp Fresh Dill Chopped, half mixed into the cottage cheese
  • 1 tbsp Olive Oil Extra virgin for best flavor

For the Toppings

  • 1/4 cup Cherry Tomatoes Halved, ensure they're ripe
  • 1/4 cup Cucumbers Diced, pat dry after chopping
  • 1/4 cup Bell Pepper Finely diced, any variety
  • 2 tbsp Kalamata Olives Pitted and halved
  • 1 tbsp Feta Cheese Crumbled, adjust to taste
  • 1 tbsp Red Onion Finely diced, milder than other onions
  • 1 pinch Salt To taste
  • 1 pinch Black Pepper To taste

Preparation

  • Prep Vegetables: Halve cherry tomatoes, dice cucumbers and bell pepper, pit and halve olives, finely dice red onion, and chop dill.
  • Mix Base: In a serving bowl, combine cottage cheese with half the dill and fold gently.
  • Layer Toppings: Arrange tomatoes, cucumbers, and bell pepper on top of the cottage cheese base. Season with salt and pepper.
  • Finish Assembly: Scatter olives and feta cheese on top, sprinkle remaining dill.
  • Drizzle Oil: Lightly drizzle with extra virgin olive oil.
  • Rest: Let the bowl sit for about 5 minutes to allow flavors to meld.

Notes
