Preparation

  • In a large mixing bowl, use a stand mixer with the paddle attachment to cream the softened butter for about 1 minute on medium speed until it's light and fluffy.
  • Sprinkle in the granulated sugar and continue beating on medium speed until the mixture turns fluffy and lighter in color, about 2-3 minutes.
  • Add the large egg and 1 teaspoon of vanilla extract to the bowl, mixing until fully combined.
  • In a separate medium bowl, whisk together the 1 1/2 cups of flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, and 1 1/2 teaspoons cornstarch until well blended.
  • Gradually add the dry mixture to your butter mixture, mixing on low speed just until combined.
  • Preheat your oven to 350°F (175°C). Line a pizza pan with parchment paper.
  • Scoop the cookie dough onto the prepared pizza pan and gently spread it out evenly to form a pizza shape, about 1/2 inch thick.
