How to Make Doritos Taco Casserole

  • Heat 2 tablespoons of oil in a skillet over medium-high heat. Sauté the diced onion until softened, about 3-4 minutes.
  • Add 1 pound of ground beef to the skillet, breaking it apart as it cooks. Brown the beef until it’s fully cooked, about 5-7 minutes.
  • Stir in 1 packet of taco seasoning, 1 can of drained pinto beans, and 1 can of Rotel tomatoes. Allow the mixture to simmer for 2-3 minutes.
  • Mix in 1 cup of sour cream, 1 teaspoon of garlic powder, and salt to taste. Stir until everything is well combined.
  • Set your oven to 375°F (190°C) while you layer the casserole.
  • Crush about 3 cups of Doritos and spread them evenly on the bottom of a baking dish. Add half of the meat mixture on top, then sprinkle with 1 cup of shredded cheddar cheese. Repeat the layers.
  • Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 7-10 minutes until the cheese is bubbly and golden brown.
